Smashed Potatoes

Serves 4 30 minute prep time

Name something you can’t waffle iron. Waffle irons were once considered single-purpose kitchen tools, but we now know they have a multitude of uses. Waffle iron recipes continue to surprise and delight, with these waffled smashed potatoes at the top of our list. Enjoy them alongside a (tofu) scramble or even as a dinner side dish. Pro tip: Pre-smash the potatoes just a bit with a potato masher, or your favorite collegiate mug would work well too.

Ingredients

  • 1½ lbs baby or fingerling potatoes, any variety
  • Olive oil, as needed
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ bunch parsley, finely chopped
  • Salt and pepper

Preparation

  • Cook potatoes in boiling water until tender enough to pierce with a fork

  • Drain potatoes and in a large mixing bowl toss with olive oil, seasonings and herbs

  • Place potatoes in waffle iron, 1 potato per small square

  • Cook in waffle maker for 5-7 minutes or until crisp and golden

  • Remove and repeat process until you have used all potatoes
