With warming spices, cinnamon and nutmeg combined with crisp autumn apples, this bowl of goodness will become a regular in this season’s breakfast repertoire.

Ingredients
- 1 cup dry quinoa
- 1 cup water
- 1 cup apple cider or apple juice
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 pinch nutmeg
- 1 apple (cored and diced)
- Optional toppings: chopped nuts, raisins, maple syrup
Preparation

Rinse quinoa with cold water.

Add quinoa, apple juice/cider, water, vanilla, cinnamon, and nutmeg into a medium pot.

Bring mixture to a boil over medium-high heat.

Add diced apple and reduce heat to medium-low.

Simmer until the quinoa is tender and the liquid is absorbed, about 10 to 15 minutes.

Remove from heat and fluff with a fork.
