Vegan Peach Cobbler

Serves 2 30 minute prep time

Originally posted on Running on Veggies When Vega Blogger Lottie, of Running on Veggies, shared her breakfast-dessert of the summer, we knew we had to spread the word. “I love baking ripe or over ripe fruit because it’s extra sweet and a great way to use fruit that is on its way out. You can totally make this a seasonal dish and use apples during the winter.”

Ingredients

  • ⅓ cup oats
  • 2 dried figs (any dried fruit can work here)
  • 2 tsp nut butter
  • Dash of cinnamon
  • 1 peach, peeled and cubed divided
  • 1 plum, peeled and cubed

Preparation

  • Preheat oven 325F.

  • In a food processor process oats, figs, nut butter, cinnamon and 1/4 cup of peaches until crumbly.

  • In two small ramekins or one larger one, evenly distribute your remaining peach and 1 plum.

  • Take your oat crumble evenly distribute it on top on the diced peaches and plums.

  • Place in the oven uncovered for 20 minutes or until golden brown.

  • Serve warm or chilled.
