Vegan Peach Cobbler

Originally posted on Running on Veggies When Vega Blogger Lottie, of Running on Veggies, shared her breakfast-dessert of the summer, we knew we had to spread the word. “I love baking ripe or over ripe fruit because it’s extra sweet and a great way to use fruit that is on its way out. You can totally make this a seasonal dish and use apples during the winter.”
Ingredients
- ⅓ cup oats
- 2 dried figs (any dried fruit can work here)
- 2 tsp nut butter
- Dash of cinnamon
- 1 peach, peeled and cubed divided
- 1 plum, peeled and cubed
Preparation

Preheat oven 325F.

In a food processor process oats, figs, nut butter, cinnamon and 1/4 cup of peaches until crumbly.

In two small ramekins or one larger one, evenly distribute your remaining peach and 1 plum.

Take your oat crumble evenly distribute it on top on the diced peaches and plums.

Place in the oven uncovered for 20 minutes or until golden brown.

Serve warm or chilled.
