Simple Seasonal Jams - Strawberry Chia Jam

We be jammin’! Whether you’re a PB&J pro or looking for something sweet to top your quinoa biscuit with, these quick jams are simple and seasonal. Jam on! These jams can be stored in the fridge for up to 7 days.
Ingredients
- Strawberry Chia Jam
- 1 cup fresh strawberries, quartered
- 2 Tbsp chia seeds
- Optional: Sweetener, as desired
- Fresh Apricot Jam
- 2 cups fresh apricots, pitted and chopped
- 1/2-1 cup sugar
- 2 Tbsp lemon juice
- Plum Jam
- 2 lbs fresh plums, pitted and quartered
- 1/4 cup water
- 2/3 cup sugar
Preparation

Strawberry Chia Jam
In a small saucepan, combine strawberries, ¼ cup water and sweetener, if using, over low heat. Cook until strawberries are soft. Mash with a fork. Add in chia seeds. Cook for an additional 5-10 minutes or until a jam texture has formed.
Place in a jar, cool and refrigerate to set.

Fresh Apricot Jam
Combine apricots, lemon juice and sugar in pot. Cook over medium heat, stirring often, until thick about 25 minutes.
Place in a jar, cool and refrigerate.

Plum Jam Instructions
In a pot, combine plums, water and sugar. Place on stove and bring to a simmer, stirring often. Cook 10-20 minutes or until plums have cooked down and mixture has thickened.
Place in a jar, cool and refrigerate.
