These Pineapple Ginger Coconut Raw Energy Balls have a nice balance of sweetness, creaminess, and crunch. Organic Medjool dates, unsweetened pineapple, and coconut make these raw energy balls irresistible!
- 3/4 cups unsweetened shredded coconut
- 10 organic Medjool dates
- 1/2 cups unsulfered unsweetened dried pineapple
- 4 Tbsp organic tahini
- 1 Tbsp sprouted chia powder
- 1/4 cups organic diced and crystallized ginger
- 3/4 cups puffed quinoa
Add all ingredients to food processor, with quinoa puffs last.
Roll into bite-size energy balls and store in fridge or freezer for ultimate freshness.
