Skip the takeout tonight and try a hearty pineapple fried brown rice. Use leftover brown rice from yesterday’s meal, add in pineapple, veggies and cashews for a flavorful take on traditional fried rice.
- 1 Tbsp oil
- 1 onion, diced
- 1 red bell pepper, diced
- 4 garlic cloves, minced
- 1½ cups, fresh or canned, chopped pineapple
- 2 cups cooked brown rice
- 2 Tbsp soy sauce or tamari
- 1 lime, juiced
- ¼ bunch cilantro
- 2 green onions, sliced
- ¼ cup roasted cashews, chopped
In a large pan or wok, heat oil. Add in onion and cook 3 to 4 minutes or until translucent.
Add in red bell pepper, garlic and pineapple. Sauté 8 to 10 minutes or until pineapple starts to brown.
Add in brown rice, soy sauce and lime. Cook until rice is hot.
Garnish with cilantro, green onions and cashews.
