You’ll fall in love with this Refreshing Rhubarb Salsa, which is best enjoyed while soaking up the sunshine. (Prefer your salsa thin? Briefly pulse all ingredients in a food processor). - 1 cup fresh or frozen rhubarb, diced
- ¼ cup red onion, diced
- ¼ cup cucumber, diced
- ¼ cup fresh cilantro, coarsely chopped
- ½ avocado, diced
- ½ green pepper, diced
- 2 Tbsp jalapeno pepper, minced
- Juice of two limes
- 1½ tsp maple syrup
- Pinch of salt
Finely dice up all salsa ingredients and add into large serving bowl.
In a separate small bowl mix together lime juice, maple syrup and salt.
Pour lime dressing on the diced vegetables, gently stir until dressing coats all ingredients.
Serve with your favorite tortilla chips.
