There is no comfort food I crave more frequently than popcorn. This recipe is a great way to (literally) spice up your popcorn game and even better than your typical sugar-coated caramel corn. Warning, this stuff is addictive!
- 1 serving Chocolate Vega® Protein & Greens
- 1 Tbsp ground cinnamon
- 1/4-1 tsp cayenne pepper (depending on your spice preference!)
- 1 1/2 tsp fine grain sea salt
- 1/3 cup popcorn kernels
- 1-2 Tbsp coconut oil, depending on popping method
Mix together Vega™ Protein & Greens, cinnamon, cayenne and salt in a jar or container (so it’s ready for your next popcorn craving!).
If using an air popper, pop 1/3 of a cup of kernels into a large bowl.
If popping on the stove-top, add 1 tablespoon of coconut oil (more if you are using a wider-based pot) to a medium sauce pan over medium-high heat. Wait until the oil has melted, add 3-4 kernels and wait until they pop. Once they’ve popped, add the rest of the kernels, cover and remove from heat for 30 seconds. Return the pan to the heat and wait for the kernels to start popping. Once it starts, gently shake the pan to ensure even popping. When the popping has slowed down to 2-3 seconds between pops, remove the pan from the heat, remove the lid and immediately dump the popcorn into a bowl.
Melt 1 tablespoon of coconut oil in a small microwave safe dish.
Drizzle the popcorn with the melted oil and carefully toss to coat kernels evenly.
Add 2 tablespoons of chocolate mixture and toss again to coat.
