Collard Green Lettuce Wraps

Serves 4 10 minute prep time

These are not your traditional lunchtime wrap. These dark leafy greens are a crunchy alternative to a wheat wrap and are perfect for a quick plant-based lunch. Try this fun “assemble your own” dinner with these collard green lettuce wraps!


  • 1 bunch collard greens
  • 1 - 2 avocados
  • Fresh medium salsa
  • ½ cup hempseeds
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • 2 tsp chili powder
  • Salt, as desired
  • ¼ red onion, thinly sliced
  • ½-1 chili petter, finely chopped
  • ⅛ head purple cabbage, thinly sliced
  • ½ bunch cilantro, chopped
  • 1 lime, juiced
  • 1 Tbsp olive oil
  • 1 cup brown rice


  • In a food processor, combine hemp seeds, pumpkin seeds, sunflower seeds, chili powder and salt. Process until a coarse grind.

  • In a mixing bowl, combine red onion, chili pepper, purple cabbage, cilantro, lime juice, oil and salt.

  • Build wraps as desired using avocado, salsa, brown rice, nut mixture and cabbage slaw.
