Apple Cinnamon Cereal

Fall is officially in motion and what’s a better way to start your morning than with a hot bowl of apple cinnamon cereal made with quinoa for extra fiber. With warming spices, cinnamon and nutmeg combined with crisp autumn apples, this bowl of goodness will become a regular in this season’s breakfast repertoire.

Ingredients

  • 1 cup dry quinoa
  • 1 cup water
  • 1 cup apple cider or apple juice
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 pinch nutmeg
  • 1 apple (cored and diced)
  • Optional toppings: chopped nuts, raisins, maple syrup

Preparation

  • Rinse quinoa with cold water.

  • Add quinoa, apple juice/cider, water, vanilla, cinnamon, and nutmeg into a medium pot.

  • Bring mixture to a boil over medium-high heat.

  • Add diced apple and reduce heat to medium-low.

  • Simmer until the quinoa is tender and the liquid is absorbed, about 10 to 15 minutes.

  • Remove from heat and fluff with a fork.

  • Serve warm with your favorite plant-based toppings!
